After a successful hunt putting in the miles chasing gobblers, there are few things better than getting that wild turkey on the grill and sharing it with friends and family. This bacon, guac, and Swiss wild turkey smash burger has long been a favorite of the Halloran family. It’s pretty simple to make, but has some unique flair to differentiate it from your same-old-same-old burger.

Ingredients

    • 1 pound ground wild turkey
    • 1 large egg
    • 1-2 tablespoons of your favorite steak seasoning or seasoned salt
    • 1 stick butter, cut into thin slices for easy melting
    • 1 pound cooked bacon
    • 5 slices Swiss cheese
    • Guacamole
    • Favorite Hamburger Roll (I prefer Brioche)
  • Optional Toppings:
    • Lettuce
    • 1 tomato, sliced
    • 1 large onion, sliced

Instructions

  1. Fire up the grill. I prefer to use a soapstone surface atop the grill but a cast iron griddle will work as well. Goal temperature between 400-450 degrees.
  2. Mix ground turkey, egg and seasonings in a medium bowl. Mix thoroughly with your hands
  3. Form into 5 equally sized balls
  4. Generously coat hot soapstone surface with butter
  5. Place meatballs on hot buttered soapstone and smash with a large solid spatula to about ½ inch thickness
    • *Tip – I like to coat the spatula with butter as well and I allow the spatula to heat up on the grilling surface to help to avoid sticking. Keeping everything well coated with butter is critical
  6. Close grill, allow to cook for one minute
  7. Flip burgers. Add bacon and cheese
  8. Close grill, allow to cook for another minute
  9. Slide each burger onto a roll, top with guac and enjoy
